Ingredients:

  • 450g (16 oz) linguine rice noodles or regular pasta
  • 45ml (3 tablespoons) soy sauce
  • 45ml (3 tablespoons) hoisin sauce
  • 60ml (4 tablespoons) honey
  • 10ml (2 teaspoons) chili garlic sauce
  • 2-3 cloves garlic, minced
  • 0.5-1ml (1/8 – 1/4 teaspoon) red pepper flakes, to taste
  • 60ml (1/4 cup) sesame oil*
  • 320g (2 cups) shredded carrots (approximately 2 large carrots)
  • 120g (1 cup) roasted, salted peanuts
  • 30g (1/2 cup) fresh cilantro, chopped
  • 30g (2 tablespoons) green onion, chopped
  • Sriracha, to taste

Directions:

  1. Bring a large pot of water to a boil and cook noodles until al dente, approximately 6 minutes.
  2. While the noodles are cooking, prepare your veggies and garnishes.
  3. In a small bowl, mix together soy sauce, hoisin sauce, honey, chili garlic sauce, and red pepper flakes.
  4. A couple of minutes before the noodles are done, in a large sauté pan, heat sesame oil over medium heat. Add minced garlic and cook for 30-60 seconds, being careful not to burn it.
  5. Add the sauce mixture to the pan and stir well.
  6. When the noodles are done, drain them and add them immediately to the pan with the sauce. Stir until the noodles are well coated.
  7. Top the noodles with shredded carrots, roasted peanuts, chopped cilantro, green onion, and Sriracha. Mix well and serve hot.

Notes: Feel free to customize this recipe with your favorite veggies, such as bell peppers, snap peas, or broccoli. For a protein boost, add cooked chicken, shrimp, or tofu.
