Ingredients:

  • 1 Teaspoon Paprika (5g)
  • 1 Teaspoon Dried Parsley (1g)
  • ½ Teaspoon Oregano (0.5g)
  • ½ Teaspoon Chili Powder (0.5g)
  • ½ Teaspoon Garlic Powder (0.5g)
  • ¼ Teaspoon Cumin (0.25g)
  • ¼ Teaspoon Salt (0.25g)
  • ¼ Teaspoon Freshly Ground Black Pepper (0.25g)
  • 1/8 Teaspoon Cayenne Pepper (0.125g)
  • 2 Tablespoons Extra-Virgin Olive Oil, divided (30ml)
  • 2 Cod Fillets*
  • 1 Tablespoon Unsalted Butter, or use ghee for Paleo & Whole30 (15g)
  • Zest and Juice of 2 Limes
  • Cooked Rice, Quinoa, or Cauliflower Rice, for serving
  • Your Favorite Vegetable, for serving

Directions:

  1. In a small bowl, combine all the spices thoroughly. Using 1 tablespoon of olive oil, brush the cod fillets and generously rub them with the spice mixture. Refrigerate for at least 30 minutes, or up to 12 hours.
  2. Preheat the oven to 450ºF (230ºC). Place the cod fillets on a foil-lined baking sheet and roast for 10-12 minutes until the fish flakes easily and is opaque throughout.
  3. In a small saucepot, melt the butter with the remaining tablespoon of olive oil. Add lime zest and juice, swirling to mix. Serve the cod over your chosen accompaniments and top with the zesty lime butter.
