Why This Strawberry Pie Recipe Shines:

  • Freshness Overload: Packed with a pound of sliced strawberries, this pie is a burst of freshness in every bite.
  • Gelatin Magic: The strawberry jello infusion adds a delightful and unique texture, setting this pie apart from the ordinary.
  • Perfectly Balanced Sweetness: A carefully calibrated blend of sugar and water ensures the filling is just the right level of sweet, making it a crowd-pleaser.

Ingredients:

  • 1 9 ” frozen pie crust, baked
  • 200g sugar (approximately 1 cup)
  • 355ml water (approximately 1.5 cups)
  • 60g cornstarch (approximately 1/4 cup)
  • 450g strawberries, sliced (approximately 1 lb)
  • 85g strawberry jello (1 3 oz pkg)

Directions:

  1. Bake the pie crust according to package directions. Remove from the oven and let it cool.
  2. In a large saucepan, combine sugar and water. Heat over medium heat and slowly whisk in cornstarch until well incorporated, ensuring a smooth mixture.
  3. Stir continuously for about 4-5 minutes until the mixture thickens and turns slightly clear. Remove from heat and whisk in strawberry jello until completely dissolved. Allow the mixture to cool to room temperature.
  4. Once cooled, add sliced strawberries and toss to coat evenly. Pour the strawberry mixture into the prepared pie crust.
  5. Place the pie in the refrigerator to set for about 2-3 hours. Optionally, dollop with whipped cream before serving.

Notes: For an extra twist, consider adding a hint of lemon zest to the filling for a citrusy zing. This pie is a great make-ahead option for parties, ensuring you have a show-stopping dessert ready to impress.
