Spicy Fiesta Queso Dip Extravaganza

The inspiration behind our Spicy Fiesta Queso Dip Extravaganza came from our family’s love for movie nights and game days. Tired of store-bought dips, I set out to create a queso that would steal the spotlight. The blend of cheeses, the kick from jalapeños, and the freshness of tomatoes and cilantro turned a casual movie night into a fiesta. Now, our friends and family can’t get enough of this spicy, cheesy delight!

Ingredients:

  • 30ml oil (vegetable/canola)
  • 1/2 medium onion, diced (about 1/2-3/4 cup)
  • 2 medium jalapeños, diced (seeds removed for milder heat)
  • 225g yellow American cheese, sliced and cubed
  • 225g Monterey Jack cheese, shredded (or Pepper Jack for extra spice)
  • 240-360ml half & half (depending on desired consistency)
  • 1-2 tomatoes, seeded and diced
  • 80g fresh cilantro, chopped
  • Optional: chili powder + cayenne pepper, to taste

Directions:

  1. In a medium-sized skillet over medium-high heat, add oil, onions, and jalapeños. Sauté for 5-10 minutes or until onions are translucent.
  2. Reduce heat to low. Add both cheeses. Gradually add half & half, stirring until smooth and reaching the desired consistency.
  3. Add diced tomatoes and cilantro. Stir and season to taste with chili powder and cayenne, if desired.
  4. Serve the hot dip right away with your choice of tortilla chips and get ready to elevate your snacking experience.

Notes: Experiment with different cheese variations for a unique twist. If reheating, add a splash of half & half to restore the creamy consistency. For a heartier dip, consider adding cooked and crumbled chorizo or ground beef.
