  • 3/4 lb rigatoni (340 g)
  • 3 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 lb Italian sausage (mild, sweet, or spicy) (454 g)
  • 5 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 2 cups grape tomatoes
  • 1 cup white wine or chicken broth (240 ml)
  • 2 small zucchini, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Handful fresh basil, chopped
  • Freshly grated Parmesan cheese

Directions:

  1. Boil salted water in a large pot over medium-high heat.
  2. In a large, wide pot, heat olive oil over medium heat. Add chopped onion and crushed red pepper; cook until onion is soft (about 10 minutes).
  3. Add Italian sausage, breaking it into small pieces with a wooden spoon. Cook until browned.
  4. Stir in minced garlic, then add tomato paste.
  5. Add grape tomatoes and wine (or stock), season with salt and pepper. Cook until tomatoes burst and release their juices (about 10 minutes). Press tomatoes gently if needed.
  6. Stir in diced zucchini and cook for 5 minutes.
  7. Cook rigatoni in boiling water for 9 to 10 minutes until al dente. Reserve 1/2 cup pasta water before draining.
  8. Toss drained pasta into the pot with the sauce, stirring well. Add reserved pasta water if needed. Stir in fresh basil.
  9. Remove from heat, divide among serving bowls, and top with freshly grated Parmesan cheese. Serve immediately!
