Ingredients:

For the Sushi Rice:

  • 3 tbsp rice vinegar

  • 1 tsp sesame oil
  • 2 tsp gluten-free tamari soy sauce
  • 0.5 tsp garlic granules
  • 1 tsp mirin

For the Bowl:

  • 2 salmon fillets
  • 2 tbsp sesame seeds
  • 4 spring onions
  • 150g (5oz) edamame beans
  • Half a ripe avocado

Instructions:

  1. Cook sushi rice according to package instructions. While cooking, prepare sushi rice dressing by mixing rice vinegar, sugar, and salt in a small dish. Pour the dressing over hot rice, fluffing it to coat evenly.
  2. Toast sesame seeds in a frying pan, sprinkle over the rice, and stir through. Set rice aside to cool slightly.
  3. Prepare salmon by removing the skin and chopping into chunks. Dice spring onions.
  4. Mix maple syrup, sesame oil, tamari, garlic granules, and mirin for the teriyaki marinade. Set aside.
  5. Assemble the bowl base by dividing rice between two wide bowls, covering two-thirds. In the remaining third, pile edamame beans and sliced avocado.
  6. Heat the teriyaki marinade in a pan until bubbling. Reduce to a glaze consistency. Add salmon chunks, stir to coat, and sprinkle spring onions. Cook until glazed and cooked to preference.
