Ingredients:
- 227 grams (1 cup) butter, softened
- 67 grams (1/3 cup) light brown sugar
- 133 grams (2/3 cup) white sugar
- 1 egg
- 2.5 milliliters (1/2 teaspoon) pure vanilla extract
- 256 grams (2 cups) all-purpose flour + 30 grams (2 tablespoons)
- 5 milliliters (1 teaspoon) baking powder
- 1.25 milliliters (1/4 teaspoon) salt
- 227 grams (2 cups) walnuts
- 10 milliliters (2 teaspoons) ground cinnamon
- 120 grams (1 cup) powdered sugar
Directions:
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- In the bowl of a stand mixer fitted with the paddle attachment, cream together the softened butter, light brown sugar, and white sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Sift in 256 grams (2 cups) of flour along with the baking powder and salt. Mix until just combined.
- In the bowl of a food processor, combine the walnuts, ground cinnamon, and 30 grams (2 tablespoons) of flour. Pulse until the walnuts are finely chopped, being careful not to over-process.
- Add the walnut mixture to the cookie dough and stir until thoroughly combined.
- Line a baking sheet with parchment paper. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are lightly golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once the cookies are completely cool, pour the powdered sugar into a large zip-lock bag. Add a few cookies at a time to the bag and gently shake to coat them evenly with powdered sugar.
- Remove the cookies from the bag and serve. Enjoy the irresistible flavors of Walnut Cinnamon Winter Cookies!
Notes: For a festive touch, consider adding a sprinkle of extra cinnamon or edible glitter to the powdered sugar coating. These cookies can be stored in an airtight container for up to one week.
