Ingredients:

  • 4-5 leeks (approximately 600-700g or 1.3-1.5 lb), ends trimmed and sliced
  • 1 clove of garlic, peeled and finely chopped
  • 20 g (approximately 0.7 oz) of butter
  • 1 tablespoon of olive oil
  • 2 sprigs of fresh thyme, leaves removed
  • 25 cl (approximately 8.5 fl oz) of liquid cream
  • 80 g (approximately 2.8 oz) grated parmesan cheese
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 200°C (approximately 400°F).
  2. Prepare the leeks by trimming the ends and slicing them into thick slices. Rinse thoroughly under water and let drain.
  3. In a skillet, heat the olive oil and butter over medium heat. Add the garlic and sauté until golden.
  4. Add the leek slices to the skillet, along with the thyme leaves. Cook for 10 to 15 minutes, stirring occasionally, until the leeks are tender.
  5. Season the leeks with salt and pepper, then stir in the liquid cream and 60 g of grated parmesan cheese. Mix well to combine.
  6. Transfer the leek mixture to a large gratin dish or individual ramekins. Sprinkle the remaining grated parmesan cheese on top.
  7. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
