Ingredients:

  • 1 packet brown gravy mix (0.87 oz) or homemade brown gravy
  • 2 small boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 3 tablespoons flour
  • 1-2 tablespoons olive oil
  • 1 tablespoon salted butter
  • 1 small yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 cup dry white wine or chicken broth
  • 8 oz tomato sauce
  • 3/4 lb thin spaghetti
  • Seasonings: 1/2 teaspoon Italian seasoning, 1/2 teaspoon parsley, 1/2 teaspoon mustard powder, 1/4 teaspoon salt

Instructions:

  1. In a large measuring cup, mix the gravy packet with 1 cup of cold water until well-combined. Add the tomato sauce and seasonings, then set aside.
  2. Cut the chicken into equal-sized cubes and season with salt and pepper. Sprinkle with flour and toss to coat.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 3-4 minutes until golden. Flip and cook on remaining sides until cooked through, about 3 more minutes. Remove and set aside.
  4. Turn off the heat. Add 1/4 cup of wine to the skillet and set the heat to medium. Use a spatula to deglaze the skillet, scraping up any browned bits.
  5. Add butter and sliced onions. Cook over medium heat, stirring often, until softened and caramelized, about 20 minutes.
  6. Add garlic and cook for 1 more minute.
  7. Pour in the remaining wine and let it simmer for 5 minutes to reduce.
  8. Add the gravy mixture to the skillet, bring to a boil, and let it thicken for 30 seconds. Reduce to a simmer and add the chicken back to the skillet.
  9. Cover partially and boil water for the spaghetti. Once boiling, salt the water and cook the spaghetti until al dente. Drain.
  10. Add the spaghetti to the sauce, toss to coat, and garnish with parsley before serving.

Notes:

  • Feel free to use homemade brown gravy instead of the packet.
  • Substitute chicken broth for white wine if desired.
  • Adjust the seasoning according to your taste preferences.
  • Serve with garlic bread for a complete meal. Enjoy!
