  • 7-8 sprigs fresh thyme
  • 1/3 cup (79ml) dry white wine

Directions:

  1. Rinse the chicken thighs under cold water and pat them dry with paper towels. Season each piece with salt and pepper on both sides and let them rest at room temperature for 2 to 3 hours.
  2. Preheat your oven to 350°F (180°C) with a rack positioned in the middle.
  3. In a large oven-safe frying pan or skillet, cook the bacon over medium-high heat for 6-7 minutes, stirring occasionally, until crisp. Remove the bacon from the pan, leaving the drippings.
  4. Add 1 tablespoon of butter to the pan. Once melted and sizzling, place the chicken thighs skin-side down. Cook for 8-10 minutes until golden brown, then flip and cook for an additional 6-7 minutes. Transfer the chicken to a plate and cover with foil.
  5. Lower the heat to medium and add the remaining tablespoon of butter to the pan. Sauté the shallots and garlic for about 10 minutes until tender and lightly caramelized.
  6. Return the chicken thighs to the pan, nestling them among the shallots. Pour in the white wine, add the cooked bacon, and tuck in the thyme sprigs. Season with additional black pepper if desired.
  7. Transfer the pan to the preheated oven and bake, uncovered, for 30 minutes until the chicken is cooked through and the sauce is bubbling.
