Ingredients:

  • 2 cups peeled and roughly chopped beets (approximately 1 large beet)
  • 3 cloves garlic, peeled
  • 1 cup diced onion
  • 1 can black beans, drained and rinsed
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons ground flaxseed
  • 2 cups rolled oats
  • 1 teaspoon paprika
  • 2 teaspoons cumin
  • 1 teaspoon red pepper flakes (optional)
  • 2 teaspoons dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium saucepan, add the chopped beets and whole garlic cloves with 2 tablespoons of water. Bring to a simmer over medium heat and steam for 8 minutes, or until the beets are soft. Add more water, 1 tablespoon at a time, if needed. Once soft, transfer the beets and garlic to a bowl and let cool.
  3. In the same saucepan, add diced onion with 2 tablespoons of water and sauté for 3 minutes.
  4. In the bowl of a stand mixer fitted with a flat beater, combine all remaining ingredients (black beans, apple cider vinegar, ground flaxseed, rolled oats, paprika, cumin, red pepper flakes, dried oregano, salt, pepper) along with the sautéed onions.
  5. Transfer the cooled beets and garlic to a food processor fitted with an S-blade. Process until smooth, scraping down the sides as needed. Add the beet mixture to the stand mixer bowl.
  6. Turn the stand mixer on low and allow all ingredients to fully combine, about 1 minute. Alternatively, you can use a potato masher to mix the ingredients.
  7. Form the mixture into patties, approximately 8 patties in total, and place them on the prepared baking sheet lined with parchment paper.
  8. Bake the patties for 20 minutes, then flip and bake for an additional 10 minutes, until golden brown and firm.
  9. Serve the beet burgers warm on a whole grain bun or over a bed of leafy greens, topped with your favorite toppings such as avocado, hot sauce, mustard, hummus, tomato, onion, etc.
