Ingredients:
- 1 round loaf of rustic bread (bread boule)
- 1 wheel of brie cheese, approximately 340g (12 ounces), top rind removed (triple cream brie recommended)
- 120ml (1/2 cup) whole berry cranberry sauce
- 2 tablespoons fresh thyme leaves
- 30ml (2 tablespoons) olive oil
- Kosher salt
- Freshly ground pepper
Instructions:
- Preheat your oven to 350°F (175°C).
- Slice off the top quarter of the bread loaf to create a lid. Use the brie wheel as a guide to trace a circle in the middle of the bread. Use a knife to cut around the circle, then scoop out the middle of the bread.
- Cut slices around the edge of the bread about 1.5 inches apart, cutting about 3/4 of the way down but not all the way through, creating pull-apart pieces.
- Brush the inside of the bread with olive oil and season with salt and pepper. Sprinkle half of the fresh thyme leaves over the bread.
- Place the brie wheel in the hollowed-out center of the bread. Sprinkle the remaining thyme leaves over the top of the brie. Spoon the cranberry sauce over the brie.
- Replace the top of the bread loaf and place it on a baking sheet lined with foil or parchment paper to catch any melted cheese.
- Bake for approximately 20 minutes, until the bread is golden brown and the cheese is melted and bubbly.
