Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 16 slices Swiss cheese
  • ½ lb (225g) ham, thinly sliced
  • Peanut oil or vegetable oil, for frying
  • 1 cup (125g) all-purpose flour
  • 4 eggs, beaten
  • 2 cups (100g) panko breadcrumbs

Creamy Dijon Sauce:

  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups (480ml) milk
  • ¼ cup (60g) Dijon mustard
  • 1 cup (100g) shredded Parmesan cheese
  • Salt and pepper, to taste

Directions:

  1. Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  2. Pound each chicken breast to about ½ inch (1 cm) thickness between plastic wrap.
  3. Layer each chicken breast with Swiss cheese and ham, then roll tightly and wrap in plastic wrap. Chill for 30 minutes.
  4. Heat oil in a pan to 325°F (170°C).
  5. Dredge each chicken roll in flour, egg, and breadcrumbs.
  6. Fry the breaded chicken rolls for about 5 minutes per side until golden brown and cooked through.
  7. For the sauce, melt butter in a saucepan, cook garlic until soft, then add flour and cook for 1 minute.
  8. Whisk in milk until smooth and thickened, then add Dijon mustard, Parmesan cheese, salt, and pepper.
  9. Slice the chicken rolls and serve with creamy Dijon sauce drizzled on top.
