Ingredients:

  • 30 chocolate sandwich cookies (such as Oreos), finely ground
  • 6 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 3 cups cream cheese, softened at room temperature
  • 1/2 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 12 chocolate sandwich cookies (such as Oreos), chopped into 1/2-inch pieces

Component Ganache:

  • 2 cups dark chocolate chips
  • 1 cup heavy cream
  • 2 tablespoons coconut oil, melted
  • 12 chocolate sandwich cookies (such as Oreos), halved, for topping

Directions:

  1. Line a 9-inch springform pan with baking spray and parchment paper. In a medium bowl, combine finely ground Oreo crumbs, melted butter, and salt. Press the mixture into the bottom of the prepared pan, and place it in the freezer while you prepare the cheesecake filling.
  2. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). In a large bowl, beat the cream cheese until smooth. Add the sugar and mix until well combined. Gradually add the eggs, one at a time, mixing well after each addition.
  3. Fold in the vanilla extract, lemon juice, and chopped Oreo pieces until evenly distributed throughout the batter.
