- 680 g (1 1/2 lb) large shrimp, peeled
- 1 bunch fresh asparagus
- 60 ml (4 tbsp) olive oil, divided

- 1 whole red onion, sliced
- 2 tsp each, oregano and smoked paprika
- 1 tsp sea salt and ground black pepper, to taste
- 1 whole lemon, juiced
- 240 ml (1 cup) black olives, pitted
- 120 g (1 cup) feta cheese
- 80 ml (1/3 cup) fresh cilantro or parsley
Instructions:
- Preheat the oven to 230°C (450°F).
- In a large bowl, season the shrimp with 30 ml (2 tbsp) olive oil, minced garlic, salt, black pepper, paprika, oregano, and lemon juice.
- Trim and wash the asparagus, then lay them flat on a baking sheet. Drizzle with 15 ml (1 tbsp) olive oil and season with salt and pepper.
- Arrange the seasoned shrimp on top of the asparagus and scatter sliced red onions over them.
- Bake for 10 minutes on the middle rack of the oven until the shrimp are cooked and the edges start to turn golden brown.
