  • 680 g (1 1/2 lb) large shrimp, peeled
  • 1 bunch fresh asparagus
  • 60 ml (4 tbsp) olive oil, divided

  • 1 whole red onion, sliced
  • 2 tsp each, oregano and smoked paprika
  • 1 tsp sea salt and ground black pepper, to taste
  • 1 whole lemon, juiced
  • 240 ml (1 cup) black olives, pitted
  • 120 g (1 cup) feta cheese
  • 80 ml (1/3 cup) fresh cilantro or parsley

Instructions:

  1. Preheat the oven to 230°C (450°F).
  2. In a large bowl, season the shrimp with 30 ml (2 tbsp) olive oil, minced garlic, salt, black pepper, paprika, oregano, and lemon juice.
  3. Trim and wash the asparagus, then lay them flat on a baking sheet. Drizzle with 15 ml (1 tbsp) olive oil and season with salt and pepper.
  4. Arrange the seasoned shrimp on top of the asparagus and scatter sliced red onions over them.
  5. Bake for 10 minutes on the middle rack of the oven until the shrimp are cooked and the edges start to turn golden brown.
  6. Remove the sheet pan from the oven and sprinkle feta cheese and black olives over the shrimp and asparagus.
