Ingredients:

  • 1 large egg
  • 15 milliliters (1 tablespoon) water
  • 225 grams (8 ounces) almond paste
  • 50 grams (1/4 cup) granulated sugar
  • 10 milliliters (2 teaspoons) vanilla extract
  • 1 sheet puff pastry
  • 30 grams (1/4 cup) sliced almonds

Instructions:

  1. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper or a silpat.
  2. In a small bowl, whisk together the egg and water. Set aside.
  3. In a food processor or stand mixer, combine the almond paste, sugar, and vanilla extract until well combined.
  4. Unfold the puff pastry sheet onto the prepared baking sheet. Using a rolling pin, gently roll it out to be slightly thinner than its original thickness.
  5. Cut slits 2.5 centimeters (1 inch) apart from the two sides of the pastry rectangle, leaving about 1.25 centimeters (1/2 inch) of space in the center for the filling. Spread the almond paste mixture down the center of the pastry.
  6. Starting from one end, fold the pastry strips over the almond mixture in a diagonal pattern, alternating sides. Brush the pastry lightly with the egg wash and sprinkle with sliced almonds.
  7. Bake for 10 minutes, then reduce the heat to 190°C (375°F) and continue baking for 17 to 20 minutes, or until the pastry is golden brown.
  8. Let cool on the pan for 10 minutes, then slice and serve.
