Ingredients:

  • 120 grams (1 cup) all-purpose flour
  • 37 grams (3 tablespoons) confectioners’ sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 85 grams (6 tablespoons) unsalted butter, cold
  • 45 milliliters (3 tablespoons) orange juice
  • 15-30 milliliters (1-2 tablespoons) ice water
  • 225 grams (1 ½ cups) golden raisins
  • 1 large egg, lightly beaten

Directions:

  1. In a food processor, combine the flour, confectioners’ sugar, baking powder, and salt. Pulse to combine.
  2. Add the cold butter, chopped into small chunks, to the dry ingredients in the food processor. Pulse until the mixture resembles coarse crumbs.
  3. Pour in the orange juice and pulse until the dough comes together in a ball. If the dough seems dry, add ice water, 1 tablespoon at a time, until a soft dough forms.
  4. Divide the dough into two discs, wrap in plastic wrap, and chill for 30 minutes.
  5. Place the raisins in the food processor and pulse until chopped.
  6. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Roll out one piece of dough on a lightly floured surface into a thin rectangle.
  8. Brush the dough with beaten egg and spread half of the chopped raisins over half of the dough.
  9. Fold the other half of the dough over the raisins and roll out again into a rectangle.
  10. Brush the surface with beaten egg and cut into squares or rectangles.
  11. Transfer the cookies onto prepared baking sheets and bake for 15-20 minutes until golden brown.
  12. Allow the cookies to cool completely before breaking apart and storing in an airtight container.
