  • 4 cloves garlic, minced
  • 5 grams (1 teaspoon) pink or sea salt
  • 2.5 grams (1/2 teaspoon) cracked black pepper
  • 240 grams (2 cups) shiitake mushrooms, whole
  • 240 grams (2 cups) sliced baby bella or cremini mushrooms
  • 960 milliliters (4 cups) chicken or vegetable broth (organic and gluten-free)
  • 120 grams (2 cups) organic kale, roughly chopped into bite-sized pieces
  • 120 milliliters (1/2 cup) coconut milk or coconut cream

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the sliced onions and sauté until golden brown and caramelized, about 10-15 minutes.
  2. Add the minced garlic, salt, and cracked pepper to the pot, stirring to combine.
  3. Add the shiitake mushrooms and sliced baby bella or cremini mushrooms to the pot. Continue to cook until the mushrooms are softened and golden.
  4. Pour in the chicken or vegetable broth and bring the mixture to a boil.
  5. Add the chopped kale to the pot, then reduce the heat to low and simmer, covered, for 20 minutes.
  6. Stir in the coconut milk or coconut cream, mixing until well incorporated.
  7. Season the soup with additional salt and pepper to taste.
  8. Ladle the soup into bowls and serve hot, savoring the comforting flavors of wild mushrooms, caramelized onions, and fresh kale.
