  • 30 milliliters avocado or vegetable oil
  • Kosher salt and freshly ground black pepper

Directions:

  1. Preheat the oven to broil and position the rack 6 inches from the heat source. Line a rimmed sheet pan with aluminum foil, then drizzle with 15 milliliters of oil and sprinkle with kosher salt.
  2. Place the salmon pieces on the prepared pan, spacing them a few inches apart.
  3. In a large mixing bowl, combine the julienned apple, radish, and celery. Toss with lemon juice and olive oil, then season with kosher salt and freshly ground black pepper. Set aside.
  4. In a small saucepan over medium-high heat, combine maple syrup and whole-grain mustard. Cook, stirring occasionally, for 1-2 minutes until the mixture begins to bubble. Reduce heat to medium and continue cooking, stirring frequently, for an additional 1-2 minutes until the sauce thickens slightly. Remove from heat.
  5. Drizzle the remaining oil over the salmon pieces and season generously with kosher salt and freshly ground black pepper. Place the pan in the oven and broil for 2 minutes.
  6. Remove the pan from the oven and brush each piece of salmon with the maple-mustard sauce. Return to the oven and broil for 1-2 minutes more. Repeat the process of brushing with sauce and broiling for an additional 1-2 minutes until the salmon is cooked through and glazed.
