Ingredients:

CRUST

  • 302g (2 ¼ cups) vanilla wafer crumbs
  • 65g (5 tbsp) sugar
  • 140g (10 tbsp) salted butter

CHEESECAKE FILLING

  • 680g (24 oz) cream cheese, room temperature
  • 207g (1 cup) sugar
  • 24g (3 tbsp) all-purpose flour
  • 96g (3.4 oz) instant banana cream pudding mix, dry
  • 58g (1/4 cup) sour cream
  • 3 large eggs, room temperature
  • 1/2 tsp vanilla extract
  • 225g (1 cup) mashed ripe bananas (2–3 bananas)

TOPPING

  • 300ml (1 ¼ cups) heavy whipping cream, cold
  • 43g (6 tbsp) powdered sugar
  • 1 tsp vanilla extract
  • 2–3 medium-sized bananas
  • 11 vanilla wafer cookies, whole

Directions:

CRUST

  1. Preheat oven to 325°F (163°C). Line a 9-inch (23cm) springform pan with parchment paper in the bottom and grease the sides.
  2. In a small bowl, combine the vanilla wafer crumbs, sugar, and melted butter. Press the mixture into the bottom and up the sides of the springform pan.
  3. Bake the crust for 8-10 minutes, then set aside to cool. Cover the outsides of the pan with aluminum foil to prevent water from entering during the water bath. Set aside.

CHEESECAKE FILLING

  1. Reduce oven temperature to 300°F (148°C).
  2. In a large bowl, beat the cream cheese, sugar, flour, and dry pudding mix on low speed until smooth and well combined.
  3. Add sour cream, mixing until incorporated. Gradually add eggs one at a time, mixing after each addition.
  4. Mix in mashed bananas and vanilla extract until combined.
  5. Pour the cheesecake batter into the prepared crust.

TOPPING

  1. Bake the cheesecake in a water bath for 1 hour 30-45 minutes until the center is set but still slightly jiggly.
  2. Turn off the oven and let the cheesecake cool inside with the door cracked open for 30 minutes.
  3. Remove from oven and water bath, then refrigerate for 5-6 hours or overnight until firm.
  4. Before serving, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread whipped cream over the chilled cheesecake.
  5. Arrange sliced bananas and vanilla wafer cookies on top of the whipped cream.
  6. Serve and enjoy!
