Ingredients:

  • 340g (¾ pound) rigatoni pasta
  • 907g (32 oz) marinara sauce (or up to 1360g (48 oz) for saucier pasta)
  • 3 cups shredded mozzarella cheese, divided
  • 80g (1/3 cup) grated Parmesan cheese, divided
  • 2 small boneless, skinless chicken breasts
  • 90g (¾ cup) flour
  • 2 teaspoons seasoned salt
  • 1/4 teaspoon pepper
  • 2 eggs
  • 180g (1 ½ cups) Italian breadcrumbs
  • 180ml (¾ cup) vegetable oil
  • 30g (2 tablespoons) butter
  • Fresh parsley, to garnish

Instructions:

Prepare the Pasta:

  1. Boil water and cook the rigatoni for 1 minute less than al dente. Drain and return to the pot.
  2. Toss the cooked pasta with 907g (32 oz) of marinara sauce, 2 tablespoons of Parmesan cheese, and 1 cup of mozzarella cheese. Set aside.

Prepare the Chicken:

  1. Pat the chicken dry and cut into strips about ½ inch thick.
  2. In three separate bowls, prepare the breading stations: one with flour, seasoned salt, and pepper; one with whisked eggs; and one with breadcrumbs.
  3. Dredge the chicken strips in the flour mixture, then dip in the eggs, and coat evenly with breadcrumbs.
  4. Heat vegetable oil and butter in a pan over medium-high heat. Cook the breaded chicken strips for about 4 minutes per side until golden brown. Transfer to a paper towel-lined plate to drain excess oil. Slice into bite-sized pieces.

Assemble the Casserole and Bake:

  1. Preheat the oven to 375°F (190°C). Grease a 9 x 13 inch casserole dish.
  2. Spread half of the rigatoni and sauce mixture in the casserole dish. Top with half of the chicken strips, 2 tablespoons of Parmesan cheese, and 1 cup of mozzarella cheese.
  3. Layer the remaining rigatoni and sauce on top, followed by the remaining chicken strips and Parmesan and mozzarella cheese.
  4. Bake uncovered for 25 minutes. For a browner, crispier top, increase the oven temperature to 425°F (220°C) and bake for an additional 5 minutes.
  5. Garnish with fresh parsley before serving. Enjoy with Garlic Bread with Cheese for a complete meal!
