  • 113 grams (½ cup) unsalted butter, cut into small pieces
  • 55 grams (⅓ cup + 1 tablespoon) all-purpose flour
  • 35 grams (⅓ cup) unsweetened cocoa powder (Dutch-process)
  • 1/8 teaspoon salt
  • 2 large eggs
  • 150 grams (¾ cup) granulated sugar

Instructions:

  1. Preheat the oven to 350°F (180°C). Line 12 muffin cups with liners and set aside.
  2. In a medium heatproof bowl, combine the chopped chocolate and butter. Heat the mixture in the microwave in 20-second intervals, stirring between each interval, until melted. Alternatively, you can set the bowl over a saucepan of simmering water, stirring occasionally. Set aside.
  3. In a small bowl, sift together the flour, cocoa powder, and salt. Set aside.
  4. Using an electric mixer fitted with the whisk attachment or a handheld mixer, whisk the eggs and sugar on high speed until thick and pale, about 4 minutes.
