Ingredients:

  • 56 grams (4 tablespoons) butter
  • 1 cup diced yellow onion
  • 283 grams (10 ounces) shredded green cabbage
  • ½ teaspoon sea salt, or to taste
  • 2 garlic cloves, minced or grated
  • 567 grams (20 ounces) frozen hash browns
  • 283 grams (2½ cups) shredded Irish cheddar cheese, divided
  • 2 green onions, chopped

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit. In a large skillet (preferably 15 inches cast iron), melt the butter over medium heat until it’s melted and slightly frothy.
  2. Add the diced onion to the skillet and sauté until fragrant and beginning to turn translucent, about 2-3 minutes.
  3. Add the shredded cabbage to the skillet and combine with the onions. Season with salt and cook for 5-6 minutes, or until the cabbage has softened and is beginning to turn lightly golden in spots.
  4. Stir in the minced garlic and cook for about a minute. Remove the skillet from heat and let the mixture cool slightly.
  5. Add the frozen hash browns and 1 ½ cups of shredded Irish cheddar cheese to the skillet, mixing until well-combined. Smooth the top with a spatula.
  6. Bake the skillet in the preheated oven for 30-35 minutes, or until the top begins to turn golden brown.
  7. Sprinkle the remaining shredded Irish cheddar cheese over the top of the skillet and bake for an additional 4-5 minutes, or until the cheese is melted and bubbly.
  8. Remove the skillet from the oven and top with chopped green onions before serving.
