Ingredients

Steaks:

  • 4 New York strip steaks (or Porterhouse steaks)
  • Salt and pepper, to season
  • 1-2 tablespoons olive oil

Creamy Garlic Shrimp:

  • 3 tablespoons unsalted butter, divided
  • 250g (8 ounces) shrimp, deveined, tails on or off
  • 4 cloves garlic, minced (or 1 tablespoon minced garlic)
  • 60ml (1/4 cup) dry white wine or low-sodium chicken broth
  • 180ml (3/4 cup) heavy cream
  • 30g (1/4 cup) freshly shredded Parmesan cheese
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped

Directions

Prepare the Steaks:

  1. Pat the steaks dry with paper towels and season generously with salt and pepper.
  2. Heat a large cast iron skillet or grill over medium-high heat. Add olive oil and sear/grill the steaks for 4-5 minutes on each side until browned and cooked to your preferred doneness.
  3. Transfer the steaks to a warm plate and set aside to rest.

Make the Creamy Garlic Shrimp:

  1. In the same skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp, season with salt and pepper, and sear until just cooked and pink, about 2 minutes per side. Transfer the shrimp to a bowl and set aside.
    • For grilling: Grill the seasoned shrimp while brushing with melted butter until done.
  2. To the same skillet, add the remaining tablespoon of butter. Add the minced garlic and sauté until fragrant, about 1 minute.
    • If grilling the meats, use a separate pan or skillet for this step.
  3. Pour in the white wine (or broth) and let it reduce by half while scraping up any bits from the bottom of the pan.
  4. Reduce the heat to low-medium and stir in the cream. Bring to a simmer, stirring occasionally.
  5. Add the Parmesan cheese and stir until melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Return the shrimp to the pan and sprinkle with chopped parsley. Stir to combine and heat through.
