Ingredients

  • 1 tablespoon (15 ml) olive oil
  • 400-450 grams (14-16 ounces) smoked sausage, sliced into medallions
  • 2 tablespoons (28 grams) butter
  • 1 medium onion, thinly sliced
  • 3 garlic cloves, minced or pressed
  • Salt to taste
  • 3/4 teaspoon freshly cracked black pepper
  • 1 1/2 teaspoons paprika
  • 1.5 to 2 pounds (680-910 grams) medium-size red skin potatoes, peeled and sliced into 1/2 inch (1.3 cm) thick circles (about 1.25 kg)
  • 360 ml (1 1/2 cups) chicken stock
  • 1/3 cup (8 grams) parsley, chopped

Directions

  1. Prepare the Sausage: Heat the olive oil in a large deep skillet over medium heat. Once hot, add the sliced smoked sausage and brown for a few minutes until deep brown in color. Remove the sausage from the pan and set aside.
  2. Caramelize the Onions: In the same pan, add the butter and let it melt. Add the sliced onions and caramelize them in the butter and sausage drippings for about 5-7 minutes. Add the minced garlic, a couple of pinches of salt, freshly cracked black pepper, and paprika. Stir to combine and sauté for an additional 2 minutes.
  3. Cook the Potatoes: Add the sliced potatoes, chicken stock, and chopped parsley to the pan. Stir to combine. Cover the pan with a lid and simmer on medium-low heat for about 15 minutes. Uncover and let the potatoes simmer for an additional 10 minutes, or until they are tender and the sauce has thickened slightly, stirring occasionally.
  4. Combine and Serve: Add the browned smoked sausage back into the pan. Season with additional salt and pepper if needed. Serve the goulash hot and enjoy!
