Ingredients

  • 2 eggs, hard-boiled
  • 2.5 ml (1/2 teaspoon) olive oil
  • 15 ml (1 tablespoon) ginger paste
  • 5 ml (1 teaspoon) garlic chili sauce
  • 240 ml (1 cup) chicken broth
  • 480 ml (2 cups) beef broth
  • 1 package Miracle noodles (spaghetti form), drained
  • 1 cup (about 70 grams) mushrooms, sliced
  • 3 cups (about 90 grams) raw spinach
  • 15 ml (1 tablespoon) soy sauce

Directions

  1. Heat the Oil: In a deep-sided skillet or pot, heat the olive oil over medium heat.
  2. Saute Aromatics: Add the ginger paste and garlic chili sauce to the pot. Saute for about 30 seconds until fragrant.
  3. Prepare the Broth: Pour in the chicken broth, beef broth, and soy sauce. Whisk to combine all ingredients well.
  4. Add Mushrooms and Noodles: Place the sliced mushrooms and drained Miracle noodles into the broth mixture. Lightly boil until the mushrooms are tender.
  5. Wilt the Spinach: Stir in the raw spinach and cook until it is just wilted.
  6. Serve: Remove the pot from heat. Spoon the ramen evenly into two bowls. Garnish each bowl with shaved radishes, chopped green onions, and a hard-boiled egg.

Notes

  • Substitutions: You can use tofu noodles or zucchini noodles as a substitute for Miracle noodles. For a vegetarian version, use vegetable broth instead of chicken and beef broth.
