Ingredients:

  • 6 boneless, skinless chicken breasts
  • Olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp (5 g) Italian seasoning
  • 454 g (1 lb) fresh mozzarella, sliced
  • 180 g (1 1/2 cups) baby spinach
  • 2 tomatoes, sliced into half moons
  • Small bunch of fresh basil
  • Balsamic glaze, for serving

Directions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Place the chicken breasts on a cutting board and make 5 to 6 slits in each breast, being careful not to cut through completely. Transfer the chicken to a small baking sheet.
  2. Season and Stuff: Drizzle the chicken breasts with olive oil, then season all over with kosher salt, freshly ground black pepper, and Italian seasoning. Stuff each breast with slices of mozzarella, baby spinach, and tomato half moons.
  3. Bake: Bake the chicken in the preheated oven until it’s cooked through and no longer pink, about 25 minutes.
  4. Garnish and Serve: Garnish the baked chicken with fresh basil leaves and drizzle with balsamic glaze before serving.

Notes:

  • Substitutions: Feel free to substitute baby spinach with arugula for a peppery twist, or use cherry tomatoes for a sweeter flavor.
  • Cooking Tip: To ensure even cooking, use chicken breasts of similar size. If the chicken breasts are very thick, you can pound them slightly to even out their thickness.
