- 1 bell pepper, finely chopped (150 g)
- 4 tomatoes, chopped, or 15 cherry tomatoes, halved (300 g)
- 8 ounces mushrooms, sliced (225 g)
- ¾ cup red wine (180 ml)
- 10 oz penne pasta (280 g), for gluten-free use brown rice penne
- ½ cup Parmesan cheese, shredded (optional) (50 g)
Directions:
- Remove the casings from the sausages and slice them into small pieces.
