Ingredients:
- 60g (1/4 cup) finely diced ham
- 120g (1/2 cup) grated sharp cheddar
- 2 tbsp (12g) sliced green onions
- 160g (2/3 cup) cottage cheese
- 25g (1/4 cup) grated Parmesan
- 30g (1/4 cup) white whole wheat flour
- 60g (2/3 cup) almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 4 eggs, beaten
- 3 tbsp (45ml) water
Directions:
- Preheat and Prep: Preheat your oven to 400°F (200°C). Spray large silicone baking cups with non-stick spray or olive oil, or use foil muffin cups and spray those as well.
- Prepare Ingredients: Dice the ham, slice the green onions, and measure out the grated cheeses.
- Mix the Batter: In a mixing bowl, combine the cottage cheese, Parmesan, white whole wheat flour, almond flour, baking powder, salt, beaten eggs, and water. Mix until well combined.
- Add Mix-Ins: Gently stir in the diced ham, grated sharp cheddar, and sliced green onions.
- Fill Muffin Cups: Divide the batter evenly between six muffin cups.
- Bake: Bake the muffins for 25-30 minutes, until they are lightly browned on top and set. If you plan to reheat in the microwave, bake for about 25 minutes. For immediate consumption, bake closer to 30 minutes.
- Cool and Store: Allow the muffins to cool before refrigerating. They can be reheated in the microwave, but be careful not to overheat as they can become tough.
Notes:
- Substitutions: You can substitute the white whole wheat flour with flaxseed meal or hemp hearts for added nutrition.
- Cheese Variations: Feel free to experiment with different cheeses like Gruyere or feta for a unique flavor twist.
- Storage Tips: Store muffins in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave to avoid toughness.
- Serving Suggestions: These muffins pair well with a side of fresh fruit or a dollop of Greek yogurt for a complete breakfast.
