  • 60g (1/4 cup) finely diced ham
  • 120g (1/2 cup) grated sharp cheddar
  • 2 tbsp (12g) sliced green onions
  • 160g (2/3 cup) cottage cheese
  • 25g (1/4 cup) grated Parmesan
  • 30g (1/4 cup) white whole wheat flour
  • 60g (2/3 cup) almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 eggs, beaten
  • 3 tbsp (45ml) water

Directions:

  1. Preheat and Prep: Preheat your oven to 400°F (200°C). Spray large silicone baking cups with non-stick spray or olive oil, or use foil muffin cups and spray those as well.
  2. Prepare Ingredients: Dice the ham, slice the green onions, and measure out the grated cheeses.
  3. Mix the Batter: In a mixing bowl, combine the cottage cheese, Parmesan, white whole wheat flour, almond flour, baking powder, salt, beaten eggs, and water. Mix until well combined.
  4. Add Mix-Ins: Gently stir in the diced ham, grated sharp cheddar, and sliced green onions.
  5. Fill Muffin Cups: Divide the batter evenly between six muffin cups.
  6. Bake: Bake the muffins for 25-30 minutes, until they are lightly browned on top and set. If you plan to reheat in the microwave, bake for about 25 minutes. For immediate consumption, bake closer to 30 minutes.
