  • 2 cloves garlic, chopped
  • 1 cup panko breadcrumbs (about 100g / 0.22 lb)
  • 1/4 cup grated parmesan cheese (about 25g / 0.06 lb)
  • 1 egg
  • 3 tablespoons butter, melted (about 42g / 0.09 lb)
  • 1 tablespoon prepared pesto
  • 4 ounces shredded mozzarella cheese (about 115g / 0.25 lb)
  • Fresh chopped, flat-leafed Italian parsley
  • Salt and pepper to taste

Directions:

  1. Prepare the Eggplant: Peel and cube the eggplant. Boil in salted water until soft, about 10 minutes.
  2. Saute the Aromatics: While the eggplant cooks, sauté the diced red onion and chopped garlic over medium heat until translucent and fragrant, taking care not to burn the garlic. Set aside.
