- 2 eggs
- 35g / 0.08 lb shredded Parmesan cheese
- 60g / 0.13 lb breadcrumbs
- 1 small bell pepper, finely diced (about 120g / 0.26 lb)
- 2 tbsp mayonnaise (about 28g / 0.06 lb)
- 2 tbsp Dijon mustard (about 28g / 0.06 lb)
- 2 tbsp chopped scallion (about 12g / 0.03 lb)
- 1/2 tsp sea salt, or to taste
- 2 tbsp avocado oil for frying (about 28g / 0.06 lb)
Directions:
- Prepare the Salmon: Place the canned salmon into a medium mixing bowl and gently flake with a fork.
- Combine Ingredients: Add the eggs, shredded Parmesan cheese, breadcrumbs, finely diced bell pepper, mayonnaise, Dijon mustard, chopped scallion, and sea salt to the bowl with the salmon. Mix everything well until thoroughly combined.
- Form Patties: Using a 1/2-cup measure, form small patties with your hands.
