The aroma filled the kitchen, and my husband walked in, drawn by the tantalizing scent. When I served the mushrooms, he took one bite and declared them the best mushrooms he’d ever had. Now, these Savory Roasted Portobello Mushrooms are a regular feature at our table, loved by the whole family for their delicious flavor and ease of preparation.

Ingredients:

  • 340g / 0.75 lb Portobello mushrooms
  • 1 clove garlic, minced
  • 2 tbsp olive oil (about 28g / 0.06 lb)
  • Salt and pepper to taste
  • 1/2 tsp dried thyme
  • 1/2 tbsp butter (about 7g / 0.015 lb)
  • 1 tbsp grated Parmesan cheese (about 5g / 0.01 lb)
  • 3 tbsp shredded mozzarella cheese (about 21g / 0.05 lb)

Directions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Mushrooms: Wipe the Portobello mushrooms clean and remove the stems. Place the mushrooms on a lightly oiled baking sheet, open side facing up.
  3. Mix the Seasoning: In a small bowl, combine the olive oil, minced garlic, dried thyme, salt, and pepper. Drizzle this mixture evenly over the inside of each mushroom.
  4. Add Butter: Place a thin slice of butter inside each mushroom.
  5. Bake: Bake the mushrooms in the preheated oven for around 15 minutes, or until tender.
  6. Add Cheese: While the mushrooms are baking, mix together the grated Parmesan and shredded mozzarella. After 15 minutes, remove the mushrooms from the oven and top with the cheese mixture.
  7. Finish Baking: Return the mushrooms to the oven for an additional 5 minutes, or until the cheese is golden and bubbly.
  8. Serve: Remove from the oven and serve immediately. Enjoy as a side dish, appetizer, or main course.
