One evening, I was craving pizza but wanted something a bit healthier and unique. That’s when I decided to try making Pizza Stuffed Portobello Mushrooms. My husband and kids were intrigued by the idea, and once they took their first bite, they were hooked! Now, this dish has become a favorite in our household, bringing the deliciousness of pizza into a wholesome, veggie-packed meal.

Ingredients:

  • 4 Portobello mushrooms, cleaned (see notes)
  • 60 ml (4 tbsp) pizza sauce
  • 60 g (4 tbsp) cheddar cheese, grated (or cheese of choice)
  • 12 small slices chorizo (or pepperoni)
  • 60 g (4 tbsp) mixed peppers, finely diced
  • 20 g (4 tsp) onion, finely diced
  • 1 tsp dried Italian herbs
  • Salt and black pepper, to taste
  • Olive oil, as needed

Directions:

  1. Prepare Mushrooms: Preheat your oven to 200°C (390°F). Remove the stalks from the mushrooms and scrape out the gills with a teaspoon. Lightly coat with olive oil and season with salt and pepper. Pierce each mushroom 4-5 times with a toothpick to allow moisture to escape during cooking.
  2. Pre-bake Mushrooms: Place the mushrooms on a rack over a pan to catch any moisture. Bake for 6-10 minutes until they just begin to wilt and release some water. Ensure they retain some shape and don’t wilt completely.
  3. Drain and Dry: Remove the mushrooms from the oven and drain away excess moisture. Pat them dry with paper towels.
  4. Assemble Pizzas: Spread a layer of pizza sauce on each mushroom, followed by grated cheese. Evenly sprinkle the diced mixed peppers, onions, and place the chorizo slices on top. Finish with a dusting of dried Italian herbs.
  5. Final Bake: Return the mushrooms to the oven and broil/grill for a few minutes until the cheese is melted and starts to crisp.
