Ingredients

Apple Cobbler Filling

  • 62.5 ml (1/4 cup) lemon juice
  • 1.58 kg (3 ½ lbs) sweet apples, peeled and sliced
  • 73g (1/3 cup) packed brown sugar (light or dark)
  • 2.5g (½ teaspoon) almond extract (optional)
  • 1.42g (¼ tsp) table salt or 3g (½ teaspoon) kosher salt
  • 15g (2 tablespoon) cornstarch
  • 2.64g (1 teaspoon) ground cinnamon
  • 1.1g (½ teaspoon) ground cloves

Cookie Topping

  • 187.5g (1 ¼ cup) all-purpose flour
  • 2.64g (1 teaspoon) ground cinnamon
  • 5g (1 ¼ teaspoon) baking powder
  • 2.84g (½ teaspoon) table salt or 4.5g (¾ teaspoon) kosher salt
  • 142g (10 tablespoon) butter, melted and cooled to room temperature
  • 139.38g (½ cup plus 2 tablespoon) packed brown sugar (light or dark)
  • 62.5g (¼ cup plus 1 tablespoon) granulated sugar
  • 5g (1 teaspoon) pure vanilla extract

Directions

Step 1: Prepare the Apple Cobbler Filling

  1. Preheat Oven: Preheat the oven to 350°F (176°C). Generously butter a 12-inch cast iron skillet or a baking dish.
  2. Prepare Apples: In a large bowl, toss the apple slices with lemon juice to prevent browning.
  3. Mix Filling Ingredients: Add brown sugar, almond extract (if using), salt, cornstarch, cinnamon, and cloves to the apples. Toss gently to combine.
  4. Bake Apples: Spread the apple mixture evenly in the prepared skillet or baking dish. Bake for 15 minutes.

Step 2: Make the Cookie Topping

  1. Mix Dry Ingredients: In a bowl, combine flour, baking powder, cinnamon, and salt.
  2. Combine Topping Ingredients: Add melted butter, brown sugar, granulated sugar, and vanilla extract to the dry ingredients. Stir until just combined into a soft dough.

Step 3: Assemble and Bake

  1. Add Topping: Remove the apple filling from the oven. Crumble the cookie dough over the apples in an even layer.
