Why This Chicken Tortellini Soup Recipe?

  • Comfort in a Bowl: This soup is the ultimate comfort food, combining rich flavors with wholesome ingredients.
  • Quick and Easy: Ready in under 30 minutes, this recipe is perfect for busy weeknights when you need a nourishing meal fast.
  • Versatile Ingredients: With the option to use gluten-free tortellini, this recipe can be easily adapted to suit dietary preferences.
  • Bright and Fresh: A squeeze of lemon juice and a handful of fresh parsley add a burst of freshness to this savory soup.

Ingredients:

  • 1 tablespoon (15 ml) olive oil
  • 1 cup (150 g) diced onion
  • 1 cup (130 g) diced carrots
  • 1 cup (100 g) diced celery
  • 4 cups (960 ml) chicken broth or stock
  • 2 cups (300 g) cooked chicken, cut into small pieces
  • 1 teaspoon (2 g) poultry seasoning
  • 8 ounces (225 g) cheese tortellini (gluten-free if needed)
  • 1 handful (15 g) parsley, chopped
  • Juice of 1/2 lemon (optional)
  • Salt and pepper to taste

Directions:

  1. Heat the olive oil in a large stockpot over medium-high heat. Add the diced onion, carrots, and celery, sautéing until the vegetables are tender, about 8-10 minutes.
  2. Pour in the chicken broth or stock, then add the cooked chicken and poultry seasoning. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
  3. Stir in the cheese tortellini and continue to simmer until the tortellini are just tender, about 5 minutes.
  4. Finish by mixing in the chopped parsley and a squeeze of lemon juice (if using). Season with salt and pepper to taste.

Notes:

  • Substitutions: You can use any type of tortellini you prefer, whether cheese-filled, meat-filled, or gluten-free.
  • Make it Heartier: For an even more filling soup, add a handful of spinach or kale during the last few minutes of cooking.
  • Leftover Tip: This soup stores well in the fridge, but the tortellini may absorb some of the broth. Add a splash of extra broth when reheating to adjust the consistency.
