  • 1 pound (450g) Boneless, Skinless Chicken Breasts

  • Salt & Pepper to taste
  • 1 tablespoon (15g) Butter
  • 3 Garlic Cloves, minced (about 15g)
  • 4 small Tomatoes, diced (about 300g)
  • 2 cups (60g) Fresh Spinach
  • 1 ½ teaspoon (3g) Paprika
  • 1 teaspoon (2g) Italian Seasoning (more to taste)
  • ¼ teaspoon (0.5g) Crushed Red Pepper Flakes
  • ½ teaspoon (3g) Salt
  • 1½ cups (360ml) Heavy Cream
  • 1 cup (100g) Shredded Parmesan Cheese (more for garnish)

Pasta:

  • 10 oz. (280g) Penne Pasta
  • 2 tablespoons (8g) Fresh Parsley, chopped

Directions:

  1. Cook the Bacon: In a large skillet, fry the bacon strips until they are crispy. Remove them from the pan and place them on a paper towel-lined plate to absorb excess grease. Chop the bacon into 1-inch (2.5cm) pieces. Drain and wipe the skillet.
  2. Cook the Chicken: Pat the chicken breasts dry with a paper towel, then season with salt, pepper, and garlic powder. Heat olive oil in the same skillet over medium-high heat. Cook the chicken for 4 minutes per side, or until browned. If the chicken is still pink in the middle, cover and cook on medium until fully cooked. Remove from the pan and slice into strips.
  3. Prepare the Sauce: In the same pan, melt butter and sauté the minced garlic for 1-2 minutes until fragrant. Add the diced tomatoes and cook for 3 minutes until they release their juices. Add the spinach and cook until wilted.
