Ingredients:
- 450g (1 pound) lean ground beef
- 1/2 medium onion, chopped
- 3-4 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon Italian seasoning
- 200g (1 cup) uncooked orzo pasta
- 398ml (14 ounce) can tomato sauce
- 180ml (3/4 cup) beef broth
- 240ml (1 cup) heavy/whipping cream
- 5ml (1 teaspoon) Worcestershire sauce
- 60g (1/2 cup) freshly grated Parmesan cheese
- 2 cups (packed) fresh baby spinach
- Salt & pepper, to taste
Instructions:
- In a soup pot or Dutch oven, add the ground beef and cook over medium-high heat, breaking it up with a spoon, for 5-6 minutes until lightly browned.
- Add the chopped onion to the pot and continue cooking, stirring occasionally, for another 5 minutes until the onion is softened and translucent.
- Stir in the minced garlic, crushed red pepper flakes (if using), and Italian seasoning, and cook for about a minute until fragrant.
- Add the uncooked orzo pasta to the pot and stir to combine with the beef and onion mixture.
- Pour in the tomato sauce, beef broth, heavy cream, and Worcestershire sauce. Allow the mixture to come to a gentle bubble, then reduce the heat to medium-low and simmer, uncovered, for 10 minutes, stirring occasionally to prevent sticking.
- Remove the pot from the heat and stir in the grated Parmesan cheese and fresh baby spinach until wilted.
- Cover the pot and let it sit for 3-5 minutes to allow the sauce to thicken.
- Season the dish with salt and pepper to taste, then serve immediately.
