Crispy Zucchini Tater Tots: A Healthy Snack You’ll Love

Ingredients:

  • Cooking spray
  • 3 large zucchini, grated (approximately 750g / 1.65 lbs)
  • 2 large eggs, lightly beaten
  • 60g (1/2 cup) shredded cheddar cheese
  • 45g (1/2 cup) grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1/4 tsp kosher salt
  • Freshly ground black pepper, to taste
  • Ketchup, for serving

Directions:

  1. Preheat your oven to 400°F (200°C) and grease a baking sheet with cooking spray. Using a box grater, grate the zucchini onto a clean kitchen towel. Gather the ends of the towel and squeeze out as much excess liquid as possible over the sink.
  2. In a large bowl, whisk the eggs until the yolks are broken and the mixture is uniformly yellow. Add the grated zucchini, shredded cheddar, grated Parmesan, dried oregano, garlic powder, kosher salt, and freshly ground black pepper. Mix until all ingredients are well combined.
  3. Scoop out 1 tablespoon of the mixture and shape it into a tater tot form with your hands. Place each tot on the prepared baking sheet, leaving space between each one.
  4. Bake the tots in the preheated oven for 15 to 20 minutes, or until they are golden brown and crispy. Serve warm with ketchup for dipping.
