Ingredients:

  • 500 g ribs, preferably from younger pigs
  • 1/4 to 1/3 cup starch
  • Oil for deep-frying
  • Marinating:
    • 6-8 garlic cloves, roughly chopped
    • 3-4 slices ginger
    • 1 tbsp light soy sauce
    • 1/2 tsp dark soy sauce
    • 1 tbsp oyster sauce
    • 1 tsp salt
    • 1/4 tsp white pepper
  • Dry spice mixture dip:
    • 1 tsp salt
    • 1 tbsp chili pepper flakes
    • 1 tbsp ground cumin
  • Spicy dip:
    • 1 Thai chili pepper, cut into small circles
    • 1 tbsp light soy sauce
    • 1 tbsp sesame oil
    • 1/2 tbsp black vinegar
    • 1 tsp chopped garlic
    • 1 tsp chopped green onion

Directions:

  1. Roughly chop the garlic, rinse under running water, and set aside.
  2. Soak the ribs in clean water for half an hour to remove any blood water.
  3. Pat the ribs dry with kitchen paper, then marinate them with garlic, ginger, light soy sauce, dark soy sauce, oyster sauce, salt, and white pepper. Allow the ribs to marinate for at least 4 hours or overnight in the fridge.
  4. Before frying, add starch to the marinated ribs and mix well to coat evenly.
  5. Heat oil in a deep frying pan to 140-150°C. Slowly fry the ribs until they are slightly browned, stirring occasionally. This process may take 6-10 minutes. Transfer the ribs to a plate.
  6. Heat the oil until it’s almost smoking, around 200°C. Carefully place the ribs back into the hot oil and fry for another 20 to 30 seconds, stirring continuously to avoid burning the garlic.
  7. Serve the crispy garlic ribs hot, accompanied by the spicy dip for an extra kick of flavor.

Notes: For a healthier option, you can bake the ribs instead of deep-frying them. Simply preheat your oven to 375°F (190°C) and bake the marinated ribs on a lined baking sheet for 25-30 minutes or until they are cooked through and crispy.
