Ingredients:

Cookie Base:

  • 455 g (16 oz) chocolate chip cookie dough, room temperature

Brownie Layer:

  • 510 g (36 oz) brownie mix, prepared according to package instructions

Cheesecake Layer:

  • 680 g (24 oz) cream cheese, softened
  • 100 g (½ cup) sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Additional:

  • 40 double-stuffed chocolate cookie sandwiches
  • Whipped cream, for serving

Directions:

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (180°C).
    • Line a 10-inch (25-cm) springform pan with two layers of plastic wrap, ensuring it hangs over the sides.
  2. Cookie Dough Base:
    • Press the cookie dough evenly into a circle at the bottom of the pan. Fold the plastic wrap over the top and freeze the dough disk.
  3. Brownie Layer:
    • Re-clasp the pan, spray the bottom with cooking spray, and pour in the brownie batter.
    • Grease the bottom and sides of a smaller 5-inch (12-cm) or 8-inch (20-cm) cake pan. Press this pan into the brownie batter until the batter reaches halfway up the sides of the springform pan.
    • Bake for 35 minutes, then cool for about 5 minutes.
  4. Cheesecake Filling:
    • Reduce the oven temperature to 300°F (150°C).
    • In a large bowl, mix together the cream cheese, sugar, vanilla extract, and egg until smooth.
  5. Shape the Brownie Shell:
    • While the brownie is still warm, carefully press down the inner cake pan using oven mitts to form an even ring around the brownie. Chill for 30 minutes.
  6. Assemble Layers:
    • Arrange a layer of about 14-15 chocolate cookie sandwiches on the bottom of the brownie shell.
    • Pour the cheesecake batter over the cookies and spread it evenly. Tap the pan to release any air bubbles.
    • Bake for about 40 minutes until the cheesecake slightly jiggles in the center. Freeze until the cheesecake is slightly firm, around 30 minutes.
  7. Final Layer and Bake:
    • Place another layer of cookies on top of the cheesecake layer. Add the frozen cookie dough disk on top and tuck in the edges.
    • Bake for an additional 20 minutes.
  8. Cool and Serve:
    • Chill completely before releasing the pan. Slice and serve with a dollop of whipped cream and a cookie on top.
