Ingredients:

Pie Filling:

  • 1 deep dish pie crust, baked
  • 1 cup (200g) sugar
  • 3 1/2 tablespoons (26g) all-purpose flour
  • 1/4 teaspoon real salt
  • 4 tablespoons (24g) cocoa powder or cacao powder
  • 3 egg yolks
  • 10 ounces (296ml) heavy whipping cream
  • 6 ounces (177ml) milk
  • 4 ounces (118ml) water
  • 1 1/2 tablespoons (21g) unsalted butter
  • 2-3 teaspoons (10-15ml) vanilla flavoring

Meringue Ingredients:

  • 3 egg whites (separated from yolks used in the pie filling)
  • 5 tablespoons fine grain sugar
  • 1 teaspoon vanilla

Whipped Cream Topping:

  • 1 cup (237ml) heavy whipping cream
  • 3 tablespoons fine grain sugar
  • 1 teaspoon vanilla

Instructions:

  1. In a small bowl, mix together the sugar, flour, salt, and cocoa powder.
  2. In a medium saucepan, whisk the egg yolks together. Add the milk, heavy whipping cream, and water to the saucepan, then whisk well.
  3. Cook over medium heat, stirring constantly with a wooden spoon, until the mixture begins to boil.
  4. Once boiling, add the dry ingredients to the saucepan, whisking to combine. Add the butter and continue to stir constantly.
  5. Cook for 5 minutes or until the filling thickens to a pudding-like consistency. Remove from heat and stir in vanilla flavoring.
  6. Pour the filling into the baked pie crust.
  7. For meringue topping: In a mixing bowl, beat egg whites until fluffy. Gradually add sugar and vanilla, beating until stiff peaks form. Spread meringue over the pie, then brown under the broiler.
  8. For whipped cream topping: In a chilled bowl, whip heavy whipping cream until it begins to stiffen. Gradually add sugar and vanilla, continuing to beat until stiff peaks form.
  9. Refrigerate the pie for at least one hour before serving.

Notes:

  • For best results, ensure that the pie crust is fully baked before adding the filling.
  • Feel free to customize the toppings to suit your preferences, whether it’s meringue, whipped cream, or a combination of both.
  • Store any leftover pie in the refrigerator, covering it to prevent drying out. Enjoy within a few days for optimal freshness.
