Ingredients:

For the Cookie Dough:

  • ½ cup sugar
  • 2 cups cake or all-purpose flour

  • ¾ cup strawberry jam (thickened with ½ tablespoon cornflour if preferred)

For the Buttercream:

  • ¾ cup butter
  • 1 ½ cups powdered sugar
  • ½ teaspoon vanilla extract (optional)

Instructions:

  1. In a large mixing bowl, beat the softened butter and sugar together for about 3 to 5 minutes until pale, light, and fluffy.
  2. Sift the flour into the beaten butter mixture and mix gently to combine, forming a soft dough.
  3. Divide the dough in half and form each half into a disk. Place each disk between two large sheets of parchment paper or wax paper.
  4. Use a rolling pin to roll each piece of dough to a thickness of about 3/16 inch (5mm).
  5. Refrigerate the rolled dough sheets for 30 minutes to chill.
  6. Preheat the oven to 320°F (160°C) and line a baking sheet with parchment paper.
  7. Remove the chilled dough from the refrigerator and cut out cookies using a 2-inch round cookie cutter. For half of the cookies, use a smaller round cookie cutter or piping nozzle to cut out a window in the center.
  8. Place the cookies on the prepared baking sheet and bake for 12 to 15 minutes until golden brown.
  9. Allow the cookies to cool completely on a wire rack.
  10. Once cooled, assemble the cookies by piping buttercream along the outer edge of the bottom part of each cookie.
  11. Place the top part of each cookie (with the cut-out center) over the piped buttercream and press lightly to sandwich the cookies together.
  12. Fill another piping bag with the strawberry jam and pipe it into the center of each cookie.
  13. Sprinkle caster or powdered sugar over the assembled cookies for a finishing touch.
