  • 75 grams (½ cup) chopped onion
  • 28 grams (2 tablespoons) butter
  • 28 ml (2 tablespoons) olive oil
  • Salt and pepper, to taste

Directions

  1. Combine Ingredients:
    • In a large mixing bowl, combine the mashed potatoes, chopped leftover vegetables, and chopped onion. Mix until everything is evenly distributed.
  2. Heat the Pan:
    • Heat 28 grams (2 tablespoons) of butter and 28 ml (2 tablespoons) of olive oil in a large frying pan over medium heat. Allow the butter to melt completely and the mixture to become hot.
  3. Cook the Bubble and Squeak:
    • Add the potato mixture to the pan, spreading it out evenly to create a single layer. Press down gently with a spatula to compact the mixture slightly.
    • Cook for about 10-15 minutes without stirring, allowing the bottom to develop a golden-brown crust. Adjust the heat if necessary to avoid burning.
