Ingredients:

  • 30ml olive oil (2 tablespoons)
  • 454g chicken breasts, thinly sliced and pounded (1 lb)
  • 270g whole wheat orzo (1 1/2 cups)
  • 7.5ml minced garlic (1/2 tablespoon)
  • 225g grape tomatoes, halved (1 1/2 cups)
  • 80g kalamata olives, pitted and sliced (1/2 cup)
  • 60ml white wine (1/4 cup)
  • 40g spinach, chopped (1 cup)
  • 30g pine nuts (optional) (1/4 cup)
  • 15ml fresh basil, chopped (1 tablespoon)
  • 15ml fresh parsley, chopped (1 tablespoon)
  • 2.5ml pepper (1/2 teaspoon)
  • 2.5ml dried oregano (1/2 teaspoon)
  • 60g feta cheese, crumbled (optional) (1/2 cup)
  • 1.25ml red pepper flakes (optional) (1/4 teaspoon)

Directions:

  1. In a small pan, bring water to a boil and cook the orzo according to package instructions.
  2. Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken with salt and pepper if desired, then sear until golden brown on both sides, about 5-7 minutes per side. Remove the chicken from the pan and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Stir in the minced garlic and cook for 1 minute.
  4. Add the halved grape tomatoes and white wine to the skillet. Cook over medium heat until the tomatoes are softened and the wine begins to reduce, about 5-10 minutes.
  5. Once the tomatoes are cooked, stir in the cooked orzo, kalamata olives, chopped spinach, pine nuts (if using), basil, parsley, pepper, and oregano. Toss until well combined.
  6. Serve the seared chicken on top of the orzo mixture. Garnish with crumbled feta cheese and red pepper flakes if desired. Enjoy!
