Ingredients:

  • 12 oz peeled and deveined U10 shrimp
  • 1 tbsp shaoxing wine or rice wine
  • 1/8 tsp black pepper
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1/2 cup chicken or vegetable stock
  • 1/8 tsp black pepper
  • 3 tbsp cooking oil (vegetable, canola, peanut, or avocado oil)
  • 3 to 5 cloves garlic, chopped
  • 1 oz ginger, very thinly julienned
  • 1 red chili, seeds removed and julienned (optional)
  • 2 oz shiitake mushrooms, sliced
  • 4 oz baby bok choy, cut into halves or quarters
  • 4 oz bamboo shoots, 1/4” sliced
  • 10 to 12 oz ready-to-use egg noodles or spaghetti, cooked al dente and drained
  • Handful of bean sprouts
  • 3 green onions, cut in halves lengthwise then into 2” long pieces
  • Sesame oil
  • Sesame seeds

Instructions:

  1. In a mixing bowl, combine shrimp, shaoxing wine, and black pepper. Set aside.
  2. In a small bowl, whisk together oyster sauce, hoisin sauce, chicken or vegetable stock, and black pepper. Set aside.
  3. Heat a wok or large skillet over high heat and add 1 tbsp cooking oil. Add shrimp and sear for 30 seconds to 1 minute on each side until cooked. Remove shrimp from the wok and set aside.
  4. Heat the now-empty wok over high heat and add remaining 2 tbsp cooking oil. Add chopped garlic, ginger, and chili (if using), and stir-fry for 30 to 45 seconds until fragrant.
  5. Add mushrooms, baby bok choy, and bamboo shoots to the wok, and stir-fry for about 1 minute until vegetables are softened.
  6. Add cooked noodles and the sauce mixture to the wok. Stir-fry for 1 to 2 minutes until noodles are coated with the sauce and no moisture remains in the wok.
  7. Add bean sprouts, green onions, and cooked shrimp to the wok, and stir-fry for another minute until all ingredients are heated through.
  8. Transfer the Shrimp Chow Mein to a serving plate and drizzle with sesame oil. Sprinkle with sesame seeds before serving.
