  • 2 cloves garlic, minced
  • 368g smoked turkey sausage, sliced into coins
  • 65g Swanson’s chicken stock (or broth; water works too) (1/4 cup)
  • 411g fire-roasted diced tomatoes (1 can)
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley flakes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Fine sea salt and pepper, to taste
  • 439g white kidney or cannellini beans, drained and rinsed (1 can)
  • 453g gnocchi (1 package)
  • 37g fresh baby spinach, coarsely chopped (1 and 1/2 cups)
  • 50g freshly grated mozzarella cheese (1/2 cup)
  • 17g freshly grated Parmesan cheese (1/4 cup)
  • Optional: fresh flat-leaf Italian parsley, finely chopped

Directions:

  1. Preheat the oven to 425°F (218°C) and move a rack to the upper third of the oven. Grease a large oven-safe skillet (such as a 12-inch cast iron skillet) with cooking spray or line with parchment paper.
  2. In the prepared skillet, heat the olive oil over medium-high heat. Add the diced onion and sauté until transparent and golden, about 5-7 minutes. Add the minced garlic and cook for an additional 30 seconds.
  3. Add the sliced turkey sausage to the skillet and cook until lightly browned, about 3-4 minutes.
  4. Pour in the chicken stock (or broth) or water, and add the fire-roasted diced tomatoes, dried oregano, dried parsley flakes, garlic powder, paprika, drained and rinsed white beans, uncooked gnocchi, and chopped spinach. Season to taste with salt and pepper.
