Ingredients:

  • 75 g (1/3 cup) hummus
  • 60 g (1/4 cup) crumbled feta cheese
  • 30 g (1/4 cup) chopped kalamata olives
  • 30 g (1/4 cup) chopped cherry tomatoes
  • Small sprigs of fresh dill, for garnish
  • Lemon wedges, optional

Directions:

  1. Prepare the Cucumber: Use a vegetable peeler to slice the cucumber into long, thin strips. Lay the strips out on paper towels to remove excess moisture.
  2. Assemble the Sushi: On a cutting board, lay two cucumber slices overlapping slightly. Spread a thin layer of hummus over the cucumber slices. Sprinkle the crumbled feta, chopped kalamata olives, and cherry tomatoes evenly on top.
  3. Roll and Garnish: Roll up each cucumber slice tightly to create sushi rolls. Stick a small sprig of fresh dill into the center of each sushi piece for a pop of flavor and color.
