  • 1 egg
  • 3 tablespoons fresh minced parsley
  • 85 grams (3 oz) fresh grated Parmesan cheese
  • Salt to taste
  • Fresh cracked black pepper to taste

Cream Sauce:

  • 30 milliliters (2 tablespoons) olive oil
  • 3 garlic cloves, pressed
  • 15 grams (1 tablespoon) all-purpose flour*
  • 360 milliliters (1 1/2 cups) heavy whipping cream
  • 85 grams (3 oz) fresh grated Parmesan cheese
  • 15 grams (1 tablespoon) minced fresh parsley
  • Salt to taste

Directions:

  1. Preheat the oven to 375°F (190°C) and grease a muffin baking pan.
  2. In a large mixing bowl, combine ground chicken, diced yellow onion, pressed garlic, bread crumbs, egg, parsley, fresh grated Parmesan cheese, salt, and pepper. Mix well until evenly incorporated.
  3. Use an ice cream scoop to portion out the chicken mixture into muffin cups. Gently press down to shape the meatloaves. Optionally, sprinkle extra Parmesan cheese on top.
  4. Bake for 22-25 minutes until cooked through, with an internal temperature of 165°F (74°C).
