  • 15ml (1 tablespoon) olive oil

  • 1 medium bell pepper, seeded and diced
  • 15g (1/4 cup) chopped parsley
  • 15g (1/4 cup) chopped chives
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon pepper (adjust to taste)
  • Olive oil for frying (about 3-4 tablespoons)

Directions:

  1. In a medium bowl, whisk together flour, baking powder, egg, and water to prepare the batter. Once smooth, add olive oil, salt, and pepper, and mix well.
  2. To the batter, add corn, bell pepper, parsley, and chives. Mix thoroughly and set aside.
