Balsamic Roasted Mushrooms:
- 1 lb. mushrooms (454 grams)
- 1 Tbsp olive oil (14 grams)
- 3 Tbsp balsamic vinegar (45 milliliters)
- 1/2 Tbsp brown sugar (6 grams)
- 1 Tbsp soy sauce (15 milliliters)
- 2 cloves garlic, minced (6 grams)
- 1/4 tsp dried thyme (0.5 grams)
Herby Kale Mashed Potatoes:
- 2 lbs. russet potatoes (907 grams)
- 6 oz. kale, chopped (170 grams)
- 1 Tbsp olive oil (14 grams)
- 3/4 tsp salt, divided (3 grams)
- 1/2 cup sour cream (120 grams)
- 1/2 cup milk (120 milliliters)
- 1 tsp dried parsley (1 gram)
- 1/2 tsp dried oregano (0.5 grams)
- 1/2 tsp dried basil (0.5 grams)
- 1/4 tsp garlic powder (0.5 grams)
- 1/4 tsp onion powder (0.5 grams)
- Freshly cracked pepper (1 gram)
Directions:
- Preheat the oven to 400°F (200°C). Wash the mushrooms and cut them in half if large.
- In a small dish, combine olive oil, balsamic vinegar, brown sugar, soy sauce, minced garlic, and dried thyme. Place mushrooms in a casserole dish, pour marinade over them, and stir until coated. Roast for 45 minutes, stirring every 15 minutes.
- Meanwhile, peel and dice potatoes, then boil until tender. Drain and set aside.
- In the same pot used for potatoes, sauté chopped kale in olive oil and water until wilted. Remove kale from pot.
- Return drained potatoes to pot, add sour cream, milk, parsley, oregano, basil, garlic powder, onion powder, 1/4 tsp salt, and pepper. Mash until smooth, then stir in sautéed kale.
- To serve, portion herby kale mashed potatoes into bowls and top with balsamic roasted mushrooms. Drizzle with juices from the casserole dish.
